A vibrant, healthy platter of crisp, colorful vegetable sticks arranged in a rainbow arch, perfect for snacking, parties, or as a kid-friendly appetizer.

This is one of my favorite go-to snacks for gatherings because everyone loves the fun rainbow presentation and fresh crunch.

Ingredients

  • Vegetables: 1 red bell pepper seeded and cut into sticks, 1 orange bell pepper seeded and cut into sticks, 1 yellow bell pepper seeded and cut into sticks, 1 cup carrot sticks, 1 cup cucumber sticks, 1 cup celery sticks, 1 cup purple (or red) cabbage cut into strips, 1 cup cherry tomatoes
  • Dip (optional): 1/2 cup hummus or ranch dip

Instructions

Step 1:
Wash and dry all vegetables thoroughly.
Step 2:
Cut bell peppers carrots cucumbers celery and cabbage into sticks or strips of similar size for even presentation.
Step 3:
On a large platter or board arrange the vegetable sticks in an arch shape grouping each color together to form a rainbow.
Step 4:
Place cherry tomatoes at one end of the arch as the pot of gold or clouds.
Step 5:
Serve with hummus or ranch dip in a small bowl on the side.
